Ingredients: (2 people) * 1 big Onion * 1/2-1 aubergine (optional) * 1-2 carrots * Butter * 2TL colza or peanut oil * 1TL Olive oil (optional) * 1 bell pepper * 1TL pepper * 1TL thyme * 1dl Red Wine * 4EL soya sauce * 3EL honey * 1TL beef buillon * 250g short grain (sushi) rice Cut all vegetables into small 1/2cm big cubes. You should have about equal parts of all the vegetables, except the onion, you may have a bit less of them. Mix the soy sauce, honey and buillon. Heat it up in the microwave a bit to make it mix better. Don't forget the rice. Sautè the onions with some butter. Take it out of the pan for later. stir-fry the aubergine and carrots with some colza or peanut oil. It's especially important if you use aubergine that it gets some roasting flavor and looses some water. Add the bell pepper and add back the onions. Add the soy sauce buillon mix from earlier. Let it cook for 5-10 minutes on medium heat. Optionally add 1TL of olive oil. Add pepper and thyme. Do not add salt, the soy sauce and buillon probably have enough of it. Add the wine, and mix everything. Put on a lid & simmer for 30 minutes. This is a good time to cook the rice. Check from time to time if there is still enough water left, the sauce should be very thick and strong, but if all the water is gone it could burn. If at the end, you have too much water, take of the lid, maybe increase the temperature a little, and let the excess water evaporate.
